Multiple Languages (i.e. non-Latin scripts)
Package babel Error: You haven't specified a language option.
How do I go about sorting this out? Is it something that can be universally addressed or do I need to do something before each citation.

within the global optins when defining the documentclass.Your best bet when dealing with different languages and scripts are XeLaTeX and LuaLateX, taking into account the bibliography stuff, biblatex and biber are the way to go. That combination should set you on track.
