MacTex Texmaker paths missing

This is a very newbie's question

I am using Tex and Texmaker for the first time on MacOS 10.8.5. I try to contribute to a complex manual, separated in several .tex, .sty, and so on. Texmaker or pdflatex obviosly is missing several pathes. However, the .pdf document is rendered, so I get output.

1) Sources have to reside in one directory. Subdirectories seem to be found. The other community of the manual does not use Tex on the Mac. They do use an include option for pdflatex on Windows --include-directory=.. , specified in the Texmaker configuration. My Texmaker notes "option not recognized".
2) Texmaker notes ".log not found". Also, the pdf does not show in Texmaker's viewer window. Both of the files (amongst others) are put in the .tex source's directory.

1) Where do I specify source pathes, not using static include or input commands in the document? This is needed to keep track to the other's source structures.
