Recover overwritten Files

Is it possible to recover overwritten files or convert from PDF to TeX?

Not directly. You can only copy text from the PDF and renew the structure by inserting the markup commands anew. But you can give PDF2TEXT a try. Presumably it will also require some post-processing.

You could if you used one of the many free syncing services which are available online, e.g. dropbox, syncables or spider sync. They save previous versions of your files, so that if you make a mistake and overwrite your file you can reload it from their servers.
