This is my first post so I'm gonna try to do my best:
I think that this kind of books really don't have authors per se, they have editors. So in the Author field you should input the name of the author of the chapter, and then in the Editor field you type in the name(s) of whoever edited the book, i.e. the names on the cover. That's how I did it and it looks awesome. I got it like this:
Freedman, J. C.: 2001, 'Membrane Transport in Red Blood Cells'. In: N. Sperelakis (ed.): Cell
Physiology Sourcebook: A Molecular Approach. Academic Press, 3rd edition, Chapt. 23, pp. 377
392.
