A multilingual multi-script document

I am creating a document which includes many languages in many scripts ranging from Norwegian, Urdu, Slovenian, English, Japanese, Hindi, Arabic and others. I am very confused about what text editor to use (my favourite Emacs seems to have trouble with non-english texts) and which Latex packages to use. Please advice me on the three:
  • 1) Which text editor is the best to just copy paste multi-script text from different sources without having to worry about checking the formatting again. I won't even be even to tell the difference in right and wrong many languages if anything goes wrong while copy-pasting.
    2) XeLatex or Pdflatex?
    3) Which latex package? Babel or Polyglossia?
I am a Linux and Mac user.

You definitely want to use XeLaTeX, nowadays it doesn't matter if you are using babel or polyglossia. Both work well with XeLaTeX.

The editor isn't the problem here. It will be how the text was entered at the other hand. Or in other words, if the text is messed up before copying, the battle is lost. If you are comfortable with emacs, go on. I am comfortable with vim.

Thanks a lot for recommending XeLatex.

Regarding Emacs, I am getting troubles. I have some contributions from other users who send me text in various languages. I simply want to copy-paste in emacs, but it shows me errors with the special (non-english) characters. I guess I will have to look into emacs settings.

When I am compiling my document using xetex and trying to use a font called Palatino Linotype I get the following error:

The font "Palatino Linotype" cannot be found.
Where in Mac can I install this font and how do I make xelatex read it? I don't know if it means anything but inside my texlive folder I do have this:

You should install this font like any other font on Mac. Once the font can be found by the system, XeLaTeX should find it as well.

I am able to find "Palatino" for Mac but I cannot locate "Palatino Linotype".

Is the font simply called palatino?

The font costs some serious money, you cannot simply download it.
