Your question “Is there a way of adapting BibTeX to do this?” is quite unclear. I assume with this you refer to “Cataloguing Wine”? If so I think you still need extend your question. I for my part have no idea what you want to do.

It sounds like you want a database type of thing, in which case you could try datatool.
