Hey guys
I just today updated Miktex from 2.8 to the latest version.
The 2.8 version was a 32 bit one, and the new install is a 64 bit one.
Running latex --version from the command line still returns "MiKTeX-pdfTeX 2.8.3759 (1.40.10) (MiKTeX 2.8)", and if I go to the full path of the 2.9 latex file and try to retrieve the version (or compile a pdf) - it stalls and just wont output anything until I ctrl+c it.
Can anyone help me out with that?

welcome to the board!
It seems that there's something really broken with the update. Perhaps deinstall MiKTeX and make a fresh install of the current version.
Or give TeX Live a try. I use it myself both on Windows and on Linux (and on servers, such as texample.net and texdoc.net) and I'm very satisfied with it.
