I've gone to the documents - settings menu and shifted the meter properly so that it says "Part" "Chapter" and "Section" appear in the table of contents.
My first image appeared in the list of figures section automatically. Yay!
However, my chapters and sections aren't appearing automatically in the table of contents??!
Is it because I do not have any "Parts" in my book?
Also what does the "numbered" meter do?

I don't use LyX personally, but I would guess that the meter in question sets the value of the "tocdepth" counter in LaTeX. My guess is that the "numbered" meter sets the "secnumdepth" counter, which determines which sections are numbered. Typically only numbered sections appear in the table of contents, regardless of these settings.
Posting an example will help us to solve the problem more effectively.

Futzing = the magical answer.
I figured it out just by messing around with the sliders in the document - settings - numbering & TOC menu. I moved the numbering slider so that everything said no, and moved the List in TOC slider so that only Part, Chapter and Section said yes.
Then from the drop down menu, I had to change my headers, which I had selected from the dropdown: "*unnumbered" section. I had to select the equivalent options from the dropdown: "section" section.

Looking at all your questions, I have the impression that you only need to read a bit more documentation, especially about LyX and its settings. Also a closer look at the LyX Wiki would do any harm.
