theoremstyles

Hi robbintops,

welcome to the LaTeX Community board!
There are several packages providing theorem environments: theorem (old, not recommended), ntheorem and amsthm. I recommend amsthm.

You did not mention which package you are using. I guess it's the amsthm package, because it provides the three styles you listed, the 6 (9) styles of the other packages (plain, break, change, margin, ... ) sound different.

The amsthm provides only those three listed theorem styles. But you can define custom styles in a very comfortable way using the \newtheoremstyle command. It is described in Using the amsthm Package 4.3 New theorem styles.

May I say that ntheorem has the advantage of solving the problem of placing the end-of-proof symbol correctly when the proof environment ends with a display environment such as align? And I personally find ntheorem much more customisable.
