Two hebrew fonts

In one computer I have miktex + babel with the old hebrew fonts jerus10, oldjaf10, etc, installed from http://www.ctan.org/tex-archive/languag ... BREW32.ZIP . With these fonts I wrote many documents which cannot be changed. On another computer I have miktex with the new "culmus" fonts,
from http://www.ma.huji.ac.il/~sameti/tex/culmusmiktex.html . Of course, documents look different with the different fonts.
I want to install both of these fonts together on the same system. My questions:
If I install both font families, what will be the default? How can I change the default?
How do I tell latex which font family to use? For the older fonts I even don't know the fontfamily, fontcode.
