yes I was indeed already looking for other options, even though none was truly convincing. But thank you for the suggestions.
It does seem like I found the problem though: After uninstalling and reinstalling MiKTeX, I checked for updates but only installed the ones labelled 'required'. Everything worked the way it was supposed to. Then I additionally installed all the other updates labelled 'optional', which resulted in the same problem as initially described. For now I will not go into the details and test which update(s) is/are responsible for the malfunction, but I will attach a list as issued by my MiKTeX GUI. Maybe someone who knows the coding behind LaTeX can draw a conclusion from this (?).

I use TeX Live. That's developed by a team and tested by many people on different operating systems. MiKTeX is a great achievement of a single developer/maintainer.
I always do a complete installation, so no need to worry about anything missing.
