Only old posts seem to refer to this and their leads are not very helpful.
Is anyone aware of any software that allows you to convert substantial word documents, including footnotes, tables, etc, into Latex?
Ideas most welcome.

Not sure what you mean with the end point, I am new to Latex.
But yes, something you could copy paste into and it would convert the document. There is one such, a website, not software, but it would not work even with a one page rtf, let alone a full document.

Word to Latex--new software?
It was supposed to mean : "and then, you clean the copied text with the replace function of your editor, that you can configure to recognize regular expressions, or patterns, in the text added by Word"...
The conversion should add caracters, but always the same ones, that you could replace with the recognition fonction of your editor. It calls 'regular expressions', try to Google it.

There is indeed software like writer2latex or pandoc, but the results aren't great and need manual fixing.
The smart way: Calm down and take a deep breath, read posts and provided links attentively, try to understand and ask if necessary.

I found an EXCELLENT site: https://www.docx2latex.com/
They are still working out some kinks, but this is almost perfect. And they respond to feedback, so if you send them problems, they will try to fix it!
