I have several questions. First, if for example I want to have line spacing 2'' . It would be easy to do for the whole document, but what if I want in the middle of the document to have a paragraph that has line spacing equal to 1'', and then continue with 2''. The second question: if I want to have a line spacing equal to 2'', but for referencing only I want to have 1''. The third question is that I want to have a title with a font size equal to 16. I looked through the tutorials, they say that I ll use Large, Huge,.. but none of them resemble the font size 16.

Another solution, with a low level command: \fontsize{16}{20}\selectfont (the second value is the interlining corresponding to this size, usually about 25% more than the font size, but it can be modulated according to typographical habits.)
